The south coast club surprised many with the decision to part ways with manager Nigel Atkins during the week, the 47-year-old having steered them to back-to-back promotions.
Pochettino, who was at the helm of Spanish La Liga side Espanyol most recently, will hand a late fitness test to Adam Lallana following a knee injury.
Southampton's top scorer Rickie Lambert is pushing for a starting berth after coming off the bench to score in Wednesday's 2-2 draw at Chelsea.
The Toffees, meanwhile, will be looking to extend their unbeaten run to three games after recording a goalless draw with Swansea on 12 January.
Belgium international Kevin Mirallas returned to training this week after two months on the sidelines with a hamstring injury.
However, boss David Moyes is unlikely to risk the attacking player in Monday's clash.
Full-back Tony Hibbert (calf) and midfielder Darron Gibson (thigh) will definitely miss out, but Johnny Heitinga could make a return to the first team after missing their last two fixtures with a knock.
