Saha, who joined from Tottenham in August, has been released on a free transfer after not starting a game for the Black Cats in the Premier League this season.
The former France international has enjoyed a successful career in England having played for Newcastle, Fulham, Manchester United, Everton, Tottenham as well as the Wearsiders, scoring 147 goals in 421 appearances.
On his departure, Sunderland chief executive Margaret Byrne said: "We wish Louis all the very best for the future and thank him for his contribution."
Elmohamady has, meanwhile, re-joined Championship side Hull on loan for the rest of the season.
The 24-year-old Egypt international was sent out on a season-long loan with the Tigers at the beginning of the campaign before being recalled by the Premier League club earlier this month, but has now returned to the KC Stadium.
He links up with former manager Steve Bruce, who signed him as Sunderland boss in 2010.
