The 25-year-old picked up the injury during the first half of the Toffees' 2-1 win over Wigan on Boxing Day and was substituted at half-time.
Gibson only featured against the Latics after his club had contested the red card he received at West Ham, with the appeal since proving successful.
However, the Republic of Ireland international will spend a spell on the sidelines regardless, having succumbed to injury again, and is set to miss the Premier League fixtures against Newcastle, Swansea, Southampton and West Brom as well as the FA Cup tie with Cheltenham Town.
Moyes, who is already without injury victims Kevin Mirallas, Tony Hibbert and Seamus Coleman, said: "I think he's going to be out for about four weeks."
